Every Saturday in Papeete, Tahiti, the Farmer's Market is open at the break of first light. An amazing array of fresh fish, caught the night before, is on display for sale in a large warehouse building. Fish are arranged on beds of ice, sorted by species. Fish markets like this are a tradition in the polynesian culture. When I go to the market I wonder what delicious meals will be prepared shoppers from what they buy. Fresh seafood is a staple in the diets of most polynesian cultures.
